When it is too hot to turn on the oven and bake, we opt for baking outdoors in the dutch ovens! Dutch Oven scalloped potatoes are an easy, tasty side dish you can bake in the dutch oven outside while relaxing in the cool shade.
Recently I was hosting our monthly book club meeting and wanted to bake some zucchini bread but it was too hot to bake indoors. I figured I might as well make the zucchini bread in a dutch oven and while I was at it, make some scalloped potatoes in the dutch oven to go with our grilled venison steaks and marinated grilled zucchini (you can find that recipe here).
We’ve been cooking in dutch ovens
for a couple years, most often when we are camping and on river trips. We’ve learned that you can bake just about anything in a dutch oven that you would bake in a normal oven as long as it fits in the pan.
I’m a total nerd about fun outdoor cooking adventures like this. Since it’s been so hot lately I’ve been inspired to figure out meals that don’t require cooking or things I can make in dutch ovens or on the grill. It is so much fun!
Dutch Oven Scalloped Potatoes
4 cups thin sliced potatoes (skin on)
½ medium size onion cut in thin slices
1 ½ cups milk
3TBS butter
2 TBS flour
½ cup shredded cheese (cheddar/Colby/Monterrey jack mix is what I used)
¼ cup grated Parmesan cheese
1TBS garlic powder
1TBS paprika
Fresh ground pepper
Salt
Prep 20-25 charcoal briquettes so they will be white and ready when the dutch oven is ready to bake. We use this handy contraption
that looks like a pipe with a handle on it. You put coals in the top part and in the bottom you put some newspaper. This is a super easy way to get your coals lit fast and easy.
Place thin sliced potatoes in bottom of the dutch oven. Mix in the onion slices. Sprinkle evenly over top the pepper, salt, garlic and paprika. Melt the butter and mix with the milk and flour. Pour this mixture on top of the potatoes and onions. Sprinkle the Parmesan and shredded cheese on top.
Place dutch oven lid on top. Place 8-10 coals evenly on the bottom, you can put them on the ground or we like to use a tin plate. Sit the dutch oven on top. Place 12 coals evenly around the top. About every 15 – 20 minutes, turn the dutch oven a half turn. This ensures a more even bake since some coals may be burning hotter than others. As hard as it is to resist, do not open your dutch ovens during baking since it lets out a lot of the heat. Once you think your meal may be done you can pull the lid and check.
Typically the dutch ovens bake similarly to the time it would take in a regular oven unless it is really cold out and then it takes a little longer. Our scalloped potatoes took about 30-40 minutes.
Here they are baking in a “Dutch Oven Double Stack” with the zucchini bread (I’ll be sharing that recipe another day!)
This scalloped potato recipe could also be used to bake in a standard oven but it just wouldn’t be as much fun without cooking in a dutch oven!

You are my kinda lady… I have a Dutch oven just like yours but I’ve only used it camping. Great idea to use it when it is too hot to cook inside. I have not had a lot of success with even cooking, it is prety hard to get the right number of coals on the top, takes for being specific.
How fun, I love hearing from other folks who use dutch ovens! We have perfected the art and pretty consistently get good, even baking. We’ve learned that turning it every 15 minutes is key to an even bake.

My mom made scalloped potatoes for us growing up that were tasty but we love ours a little cheesier so changed the family recipe a little

Using a dutch oven is really pretty easy once you get the basics down. I’ve been planning to do a post on how to use dutch ovens and just haven’t had the time so one of these days I’ll get to it!
