After harvesting a nice haul of produce from our gardens, we
were all hungry and needing some lunch to refuel us for the afternoon’s
projects. I couldn't resist sharing a picture of my little helper, a future gardener in the making!
A friend recently gave us a dozen eggs from her chickens so I decided
to
make us a tasty Garden Harvest Scramble.

I get giddy with excitement when I am able to make meals for
our family that are all home grown and
homemade, I previously wrote about this in my post called Veggie Garden Bliss. Bliss is what it really is and eating every bite of this yummy food made me smile!

Here are the ingredients we used, although you could use a
variety of veggies depending on what is ripe and ready to harvest in your
gardens:
Shallots, garlic, carrots, beets, kale, zucchini
fresh eggs
sea salt
fresh cracked pepper
yogurt or milk
Chop the shallots, mince the garlic, and thinly slice the
carrots and beets. Add them to a large pan, we always use cast iron so I chose
our largest one with a nice heavy lid.
To make sure the veggies get cooked a little, start out
by sauteing the shallots, garlic, carrots and beets in about 1 TBS butter or olive oil. While
they are sauteing, chop the zucchini into bite size pieces and tear or cut the
beet greens and kale into bit size pieces. When the carrots and beets are
starting to soften just a little, add in the chopped zucchini, beet greens
and kale. Sprinkle with sea salt and fresh cracked pepper, put the lid on and let it steam for 1-2 minutes.
While the veggies are steaming, crack as many eggs as you want to use (we
used six) in a bowl and whip. Instead of adding a little milk, I wanted to keep
this meal all homemade/homegrown/locally made so I poured in some of my
homemade piima yogurt (you can read about it here).
I
finished whipping in the yogurt then poured this mixture over the veggies and
stirred it up. Put the lid back on for a few minutes, stir once or
twice and wait for the eggs to finish cooking. I thought about adding in some
spices but the flavors of the veggies were so delicious that just the light
sprinkling of sea salt and pepper was enough for this meal.
Not to leave out our little nugget, I had to puree some of
this goodness for her. She LOVED it,
and I loved seeing her big smile and baby squeals demanding we feed her more!

ReplyDeleteThis looks so tasty! I have one daughter that loves eggs, and 2 that won't touch them. Maybe if I mix more in them, they will enjoy them better.
I too had to leave an amazing garden behind when I moved into our current house a few years ago so I know what that's like! I have been slowly restarting new gardens at our current house. Until I could get a good garden going in the ground I did a lot of container gardening, something easy to do to raise some veggies for your family without a full blown garden!
DeleteWhat a great garden. We did a little one on our deck in planters and buckets and have a great big amount of tomatoes now! Had to explain to my son why didn't have to wash them though after caught his dad eating them right off the plant
ReplyDeleteTara, that is so wonderful you were able to do some planters on your deck for veggies! I've tried that in the past and just not too successful for some reason so I'm always impressed when I hear or see folks who have bountiful veggies plants in planters :)
